56 is the city centre outpost of Gill Carroll’s growing empire, and sister to to the smash-bang success story that is 37 West. The cooking is as smartly concocted as we have come to expect from Ms Carroll, a restaurateur with a gift for thinking beyond the obvious: super food salad; goat’s cheese salad with candied walnuts; salmon fillet with basil mash. This being Galway, 56 Central does, of course, have early-morning yoga classes, followed by breakfast, and their garlic mash is already a Galway legend, fast approaching the super-legend status of their chicken melt in 37 West. So, Ms Carroll has fashioned two legends in two restaurants: not bad, even in the city where you trip over legends whilst walking down the street.
